We ended up with TONS of jalapenos in our garden this year! We weren’t sure what to do with them, so I started with a huge batch of jalapeno poppers. I make this app a lot during football season, so I made a batch to bring to my parents for dinner this weekend & froze some *before baking* to take out this fall & winter. When they’re baked for a long time, the peppers get soft and much less spicy. Enjoy!
INGREDIENTS:
- jalapenos (about 20)
- 16oz cream cheese
- shredded cheddar or mexican blend (about 1/2 cup)
- salsa (about 1/4 cup)
- bacon
INSTRUCTIONS:
- pre-heat oven to 375
- mix cheeses & salsa
- cut jalapenos in half lengthwise, remove core, & seeds *carefully, I use gloves and even wear a mask because the aroma makes me choke!
- stuff empty jalapenos with the cheese mixture & wrap in bacon (small pieces are fine)
- bake for 40mins
I know many people are concerned about sharing germs these days with COVID rates going up again. Serving apps on individual plates, bowls, or cups is a great way to still offer apps for sharing!
I would use mini plates like these and have them set up in advance if you were having an outdoor gathering or tailgate.
